My dh is the same way. During the weekdays we actually do eat separate dishes in the evening that we each make ourselves. Then on the weekends, we eat more traditionally.

I quit eating my largest meal in the evenings about three years ago. I moved it to lunch. (again, except weekends) My supper is usually cereal or fruit or yogurt or even just popcorn.
The other problem we were having with trying to eat together is that he likes to eat too late for me (past 8 p.m.). He works out hard and can get away with it, but I can't. So, he has his high protein, BIG meal that he makes with quick fix protein items and starch (mostly chicken, rice, egg whites, salsa, cheese, lamb, pork) and rarely any veggies. But he's very self-sufficient and buys into me not eating too much, so he doesn't mind doing it himself.
Our evening time is much more about sharing TV, cocktails

and Srabble and less about food. (And it's no accident, we made a conscious effort to go this way years ago.)
Any girl who can make her man a high-calorie meal and not touch it - is my idol! I am not self-disciplined enough to create a meal like that and deprive myself from having any!!!
